GOLDEN BEET, PINEAPPLE, AND KALE SMOOTHIE FOR REDUCING ARTHRITIS INFLAMMATION AND JOINT PAIN
INGREDIENTS
1 raw small-medium golden beet
handful of kale or preferred dark leafy greens, such as spinach or beet greens*
1 celery stalk, chopped
1 cup fresh or frozen pineapple
1/2 cup fresh or frozen peach
1 cup of coconut water or almond milk
1-inch fresh ginger, peeled
dash of cinnamon
dash of fresh lemon juice (optional)
*If you can’t find golden beets in the markets, use red beets. The benefits will be similar but the color will be different.
DIRECTIONS
1. Buy organic when available.
2. Thoroughly and gently rinse all fresh produce.
3. Peel and quarter or cube the beet. Beet skins ARE edible; however, due to the texture, they are best removed for blending. If you have a Vitamix or other high-speed blender, you may not notice the chunky skin texture.
4. Blend all ingredients and enjoy! Freeze coconut water in ice-cube trays for a quick, tasty way to chill drinks. If using frozen fruit, more liquid may be required.
*For individuals with existing and/or untreated kidney or gallbladder problems, you may wish to consult your physician before eating large amounts of beet greens. Like many other healthy foods, beets (notably beet greens) contain amounts of oxalates (naturally occurring substances found in plants, animals, and human beings).
